All this is reflected in commitments that go beyond waste reduction and optimization, cardboard compactors, but above all in the creation of a 3500m2 organic vegetable garden, a henhouse, six beehives, a conservatory orchard, a flowery fallow with melliferous plants, and more... all managed according to the principles of permaculture, organic and biodynamic farming.
Château Sainte Sabine and L'Hostellerie de Levernois are committed to this approach at all times. For example, the pool house is covered with vegetation, the parasols on the Bistrot terrace give way to natural shade, and almost 8 tonnes of bio-waste are sorted and recycled by a Dijon-based association, which redistributes the compost to local farmers. Local businesses also contribute to this spirit of proximity: poultry, lamb, pigeon, fruit and vegetables to the maximum, not forgetting local artisans: candles from the CasaVycha candle maker (Puligny-Montrachet), soaps from Savonniers du Morvan (Moux-en-Morvan), ceramics from Atelier JuLy (Meursault), Secrets Incomparables spreads (Beaune).
