Our Pastry Chef
Welcome to a world where desserts transcend the ordinary - a realm created by our visionary pastry Chef, Lucas Chambfort. Embark on a culinary journey where vegetables meet sweetness, fruit dances with peppers picked from our kitchen garden, and garden herbs add nuanced elegance to each delicious creation, like our peanut praline and fennel sorbet, the maracuja and Timut pepper Cheesecake, or Roasted Pear with honey from our beehives.
Trained at the Lycée de Bazeilles in the Ardennes Lorraine, it was Chefs Marc Payeur (Nice), Régis Lazard (Meuse) and Alban Barta (now in Chile) who set him on the right path.
Lucas infuses each dessert with a spirit of joy, creativity and sharing. At Table de Levernois and Bistrot du Bord de l'Eau, Lucas and his team draw inspiration from our 2700m² kitchen garden to ensure that each dessert is a harmonious blend of freshness and innovation.
